Ingredients
- 2 pcs Pork rib racks (12 each)
- 80 ml Apple cider vinegar
- 180 ml Honey
- 2 tbsp Cane sugar
- 3 tbsp Dijon mustard
- 4 tbsp Canola oil
- 1 l Water
- 250 ml Soy sauce
- 1 pcs Ginger root, peeled, grated
- 3 pinch Salt
- 1 tsp Freshly ground black pepper
Method
- Place a small saucepan over medium heat and pour in the vinegar and sugar. Stir until all the sugar dissolves then cook for about 5 minutes. Turn off the heat then whisk in the mustard and honey. Set aside to allow cooling.
- Preheat oven to 250°C.
- Brush the ribs with canola oil on both sides then season with salt and pepper.
- Place a saucepan over medium-high heat then add the soy sauce, water, and ginger. Bring the mixture to a boil and pour it at the bottom of your roasting pan with a rack on top. Place the ribs on the rack then wrap up the pan with foil. Roast for 90 minutes until the ribs are tender.
- Transfer the cooked ribs to a baking sheet lined with parchment paper. Turn on the oven’s broiler for 5 minutes. Baste the ribs with the honey glaze then place under the broiler until it turns golden and forms a nice crust.
- Remove from oven and brush the ribs with more glaze. Rest for about 10 minutes before slicing up the rack. Serve immediately.
