Ingredients
- 1 pcs Red onion
- 800 g Black beans, canned, drained, MRSJP
- 800 g Canned tomatoes
- 25 g Mexican seasoning, mild, Coles
- 1 head Cauliflower
Method
- In a large frying pan, saute the onions in 1 tbs water until golden brown. Approximately 5 mins.
- Then add to the pan with the onions the beans, tomatoes and Mexican chilli powder.(Cajun power can also be used if you don't have Mexican chilli powder)
- Bring the mix to a gentle boil, then reduce the heat and let simmer on low for 10 mins or up to 2 hours. The flavour will enhance the longer you leave it.
- Whilst this is simmering - let's make the cauliflower rice.
- Wash and thoroughly dry cauliflower, then remove all greens. If using a box grater, cut the cauliflower into large chunks and use the medium-sized holes to grate into “rice.” If using a blender, cut into small pieces and blitz 2 seconds to turn the cauliflower into “rice.”
- Then sauté in a large skillet over medium heat in 1 water or stock. Cover with a lid so the cauliflower steams and becomes more tender. Cook for a total of 5-8 minutes, continuing to stir from time to time. Season as desired with a pinch of salt and pepper.
- Now serve in seperate bowls and enjoy.
