Ingredients

  • 240 ml Quinoa, cooked before using
  • 1 pcs Butternut squash, cooked
  • 470 ml Brussels sprouts, cut in half
  • 30 g Medium red onion, sliced
  • 1 tbsp Oilve oil
  • 40 g Goat cheese, hard type
  • 15 g Pecans, chopped roughly
  • 1 pcs Apple, chopped

Method

  1. Pre-heat the oven to 200°C degrees.
  2. Prepare the quinoa by combining quinoa and vegetable broth or water in a saucepan. Simmer for 10-15 minutes, or until liquid is absorbed.
  3. On a sheet pan, toss the brussel sprouts, butternut squash, and red onion with olive oil, salt, and pepper. Roast it in the oven for 20-25 minutes or until the vegetables are browned.
  4. Time to assemble the bowls. Add about ¼ cup quinoa to a bowl. Top with goat cheese, apple chunks, and pecans. You can also add any other type of vegetables
  5. You can top it with any dressing you like, for example some olive oil with lemon juice or balsamic vinegar.
