Ingredients
- 1 7/8 pcs Bananas
- 85 g Wholegrain flour
- 30 g Walnuts, English, ground
- 40 ml Sunflower oil
- 19 g Brown sugar
- 3/8 tsp Baking powder
- 3/8 tsp Baking soda
- 3/8 tsp Cinnamon, ground
- 1 1/8 pcs Egg
- 25 g Dark chocolate, 70-85%
- 3/8 pinch Salt
Method
- 1. Preheat the oven to 170 °C (338 F) and line a medium loaf pan with baking paper (if you grease the tin with a little butter and then line it with the baking paper, it will fit better).
- 2. Mash the bananas with a fork or potato masher.
- 3. Stir in the eggs, oil and extra sweetener if needed.
- 4. Sift the flour through a sieve, but also add the larger pieces of fibre left on the sieve, because the sieving will help us to get a fine soft texture.
- 5. Add to the banana mixture the sifted flour, ground walnuts, baking powder, baking soda, cinnamon, pinch of salt and finally the dark chocolate.
- 6. Stir a few times to make sure there are no lumps, but not too long, as the dough will be very airy and may crack during the baking.
- 7. When mixed, pour into a loaf pan lined with baking paper and garnish with a halved banana.
- 8. Bake in the preheated oven on upper and lower baking mode for 45 minutes (check with a pin test).
