Ingredients

  • 2 pcs Bananas
  • 110 g Wholegrain flour
  • 40 g Walnuts, ground
  • 40 g Dark chocolate, 70-85%
  • 1 1/2 pcs Eggs
  • 15 g Erythritol
  • 1/2 tsp Cinnamon, ground
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 pinch Salt
  • 65 g Oilve oil

Method

  1. Preheat the oven to 170 °C and prepare muffin tins (e.g. a 12-cup muffin tin) about 5-6 cm in diameter, lined with muffin paper.
  2. Mash the bananas with a fork or potato masher.
  3. Stir in the eggs, oil and extra sweetener if needed.
  4. Sift the flour through a sieve, but also add any large pieces of fibre left on the sieve to the dough, as the sieving will now help us to get a nice soft texture.
  5. Add the sifted flour, the ground nuts, baking powder, baking soda, cinnamon, a pinch of salt and finally the chopped dark chocolate.
  6. Stir a couple of times to make sure there are no lumps, but not too long as the dough will become very airy and may crack during baking.
  7. When mixed, scoop into muffin tins lined with muffin paper.
  8. Bake in the preheated oven for about 30 minutes (check with a pin tester).
  9. You will get 24 muffins in total from this quantity.
