  • 20 g Coriander leaves, chopped
  • 10 g Lime juice
  • 1 pinch Salt to taste
  • 0.4 g Black pepper, ground
  • 40 g Romaine lettuce
  • 150 g Cashew nuts, halves, soaked in water for 12 hours
  • 150 ml Water
  • 10 ml Apple cider vinegar
  • 5 tbsp Nutritional yeast
  • 100 g Cherry tomatoes, halved
  • 100 g Mango, diced
  • 30 g Red onion, chopped
  • 1/4 pcs Lime juice
  • 1 pcs Avocado, peeled, sliced

Method

  1. Assemble all ingredients.
  2. To make the walnut chili
  3. Soak the walnuts in water overnight to activate. Drain and rinse well.
  4. Add the soaked walnuts, diced ripe tomato, sun-dried tomato, garlic, and chili powder to blender and pulse until you get a nice coarse texture. Do not blend to a smooth puree
  5. Transfer chili base to a container. Season with lime juice, salt, pepper, and fresh coriander. Add a few splashes of water if needed to get a nice consistency.
  6. To make the cashew sour cream
  7. Soak the cashews in water overnight if possible. Strain, rinse and add to the blender with water, cider vinegar, nutritional yeast, and salt. Blend on high speed for 30 seconds until super smooth.
  8. To make the salsa
  9. Cut the cherry tomatoes in 1/2, dice the mango, finely chop the red onion and chop the coriander. Mix everything in a bowl and season with lime juice, salt and pepper.
  10. To assemble the tacos
  11. Refresh the romaine tacos in iced water.
  12. Add the walnut meat taco to the romaine leaf, add some salsa, drizzle with cashew sour cream, and top with some sliced avocado.
  13. Serve and enjoy.
