  • 400 g Turkey mince
  • 30 g Bread crumbs, whole wheat
  • 20 g Parmesan, reduced fat
  • 1 pcs Egg
  • 4 clove Garlic
  • 30 g Fresh parsley leaves, chopped
  • 1 g Salt and freshly ground black pepper to taste
  • 100 g Fresh cranberries
  • 60 ml Water
  • 1 tbsp Maple syrup
  • 1 tbsp Cinnamon, ground
  • 1 tsp Nutmeg, ground

Method

  1. Preheat oven to 200°C.
  2. In a large bowl, mix together ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper. Form into small meatballs.
  3. Place meatballs on a baking sheet and bake for 15-20 minutes until golden and cooked through.
  4. Meanwhile, in a small saucepan, combine cranberries, water, maple syrup, cinnamon, and nutmeg. Bring to a boil, then reduce heat and simmer for 10-15 minutes until cranberries burst and sauce thickens.
  5. Serve meatballs with a spoonful of cranberry sauce on top.
