Ingredients
- 8 pcs Quail breast, boneless
- 60 ml Olive oil
- 1 clove Garlic, fresh, peeled, smashed
- 1 tsp Thyme, fresh, chopped
- 2 tsp Sage, fresh, chopped
- 2 tsp Parsley, fresh, chopped
- 1 pinch Salt
- 1 pinch Black pepper
Method
- Rinse the quail breasts under cold running water and pat dry.
- Place the quail in a large glass bowl with the olive oil, garlic, thyme, sage, and parsley.
- Toss to coat.
- Cover and refrigerate for at least two hours or overnight.
- Preheat the grill to medium-high heat (250-300°C).
- Remove quail from the refrigerator and marinate at room temperature for 20 minutes.
- Remove the quail breasts from the marinade, slice to almost 1cm thick slices, then season both sides with salt and pepper.
- Place quail on the grill and cook for 5 to 6 minutes on each side or until golden brown and cooked through (like most small birds, you do NOT want to overcook).
- Remove the quail from the grill and set aside to keep warm until ready to serve.
- Best served at room temperature with salad.
- Enjoy!
