Ingredients

  • 45 g Chickpeas, soaked in water for 24 hours
  • 25 g Brown rice
  • 1 pcs Red onion, finely chopped
  • 60 ml Vegetable broth, bouillon or consomme, low sodium
  • 10 g Bread crumbs, gluten free
  • 1 1/2 tbsp Chili powder
  • 1/2 tbsp Onion powder
  • 1/2 tbsp Sweet red paprika powder
  • 1 1/2 tsp Cumin, ground
  • 1/2 tsp Oregano, dried
  • 1/2 tsp Garlic powder
  • 1/2 tsp Cayenne pepper
  • 4 pcs Taco shell, without salt
  • 4 tbsp Salsa sauce
  • 120 ml Heads lettuce, roughly chopped
  • 90 g Tomato, diced
  • 1/2 pcs Jalapeno peppers, seeded, chopped

Method

  1. Put the rice in a medium sized pot and fill it with water, make sure you have plenty of water so that when you add the already soaked chickpeas and it will cover them. (We do not add the chick peas yet though! Partially cover and bring to a boil (about 7-8 minutes, depending on stove top).
  2. Turn the heat down to medium and cook partially covered an additional 10 minutes (should be about 18 minutes total rice cooking time). We are aiming for a chewy texture for the rice, not hard but not fully cooked.
  3. Add the soaked chickpeas and cook an additional 8 to 9 minutes.
  4. Drain and rinse and immediately put the mixture in a food processor. Make sure you have drained it well so there isn’t any residual water in the food processor. Add the taco seasoning (either using our seasoning mix recipe below or any store bought mix that you like) into the food processor and pulse once or twice to combine.
  5. While the rice and beans are boiling, you can cook the onion in a separate pan, or you can wait until they are done cooking and use the same pot to cook the onion in. Saute the chopped onion in veggie broth over medium heat for about 4-5 minutes, until it is soft and most of the liquid has evaporated.
  6. Transfer onion mixture into the food processor. Pulse until you get a nice crumble. Add breadcrumbs and pulse 2-3 more times to incorporate.
  7. Put into a bow and let it settle on the countertop for about 30 minutes. This will help the flavours absorb. Or if you are like me and it just smells to good to wait, it is already delicious.
  8. Bake tacos according to package directions.
  9. Start building your Taco’s.
  10. Fill your taco with our freshly made taco meat, top with any of your other favorite toppings and finish off with half a serve of your salsa and enjoy!
