Ingredients

  • 1 kg Chicken breast fillets
  • 250 g Chicken thigh, skinned
  • 4 pinch Salt
  • 1 tbsp Oregano, dried
  • 1 tbsp Thyme, dried
  • 1 clove Garlic
  • 2 tbsp Oilve oil

Method

  1. Peel and crush the garlic.
  2. Mince the meat with the salt, spices and garlic in a cutter until creamy.
  3. Preheat the oven to 150 °C.
  4. Tear three pieces of foil 30-35 cm long and brush the middle with oil.
  5. Divide the meat pulp into 3 equal parts and form them into 1-1 25 cm long rods with oiled hands.
  6. Place the sticks in the middle of the aluminium foil and wrap them carefully.
  7. Place the wrapped bars on a baking tray and bake for 1 hour.
  8. Check that the meat is cooked by cutting off the very end of one of the rods.
  9. If not cooked, bake for a further 15-20 minutes.
  10. When cooked, remove the core from the bars and leave to cool completely.
  11. Refrigerate to allow the flavours to meld.
  12. When completely cold, cut thin slices of the chicken cutlets.
