Ingredients

  • 120 g Oat flour
  • 60 g Butter, room temperature
  • 25 g Almonds, ground
  • 35 g Almonds, sliced
  • 35 g Dark chocolate, 70-85%
  • 18 g Erythritol
  • 18 g Brown sugar
  • 1.2 pcs Egg yolks, fresh
  • 5/8 pinch Small pinch of salt

Method

  1. Mix the soft butter with the egg yolks in a large bowl using a spoon
  2. Add the brown sugar, erythritol and a pinch of salt.
  3. Melt the dark chocolate in a metal bowl over a steam and add to the butter and sugar mixture.
  4. Add the ground almonds and flour and finally the sliced almonds.
  5. Using a spatula, knead into a dough, then place the dough on a floured surface.
  6. Fold the folpack over the dough to form a thin cylinder.
  7. Chill in the fridge for 1 hour, while the oven is preheated to 160 °C.
  8. When the hour is up, take out the cylindrical dough and place it on a tray. Cover the outside with a mixture of sugar and ground almonds.
  9. Cut the dough into finger-thick slices and place them on a baking tray lined with baking paper.
  10. Place the pan in the preheated oven and bake the biscuits for 15-20 minutes.
  11. When ready, quickly transfer to a cooling rack and wait for them to cool completely.
  12. Then you can enjoy the deliciously crumbly biscuits.
