Ingredients
- 1 pcs Homemade pie crust, lactose free
- 100 g Gruyere cheese
- 3 pcs Free range eggs
- 180 g Smoked bacon, remove rind and cubed
- 250 g Cream, half and half, lactose free
- 1 pinch Nutmeg, ground
- 1 pinch Salt
- 1 pinch Black pepper
- 1 tbsp Unsalted butter, lactose free
Method
- Preheat your oven to 200°C and grease a 23-cm flan pan with a loose base.
- Line the pan with the pie crust on the base as well as the sides, trimming any excess.
- Line the pastry with parchment paper and fill it with dried beans. Bake this for 10 minutes then remove the parchment paper together with the beans and bake for 10 more minutes until the pastry turns golden.
- Separately, heat the butter in a pan then add the bacon and onion. Cook these for around 3 minutes, stirring occasionally. Turn off the heat and drain the bacon and onions on paper towels then allow cooling.
- Sprinkle some of the cheese on the bottom of the baked pastry and add the cooked bacon.
- Turn down your oven to 180°C.
- Meanwhile, whisk the rest of the ingredients and season with salt and pepper. Pour this mixture over the bacon and top with the remaining cheese.
- Bake the quiche for around 35 minutes until it becomes golden.
- Remove from oven and allow to stand for 5 minutes, then you are ready to serve.
- You can garnish with chopped parsley leaves and a few pieces of bacon.
