Ingredients

  • 1 1/3 kg Chicken wings
  • 400 ml Home made ketchup marinade
  • 4 clove Garlic, minced
  • 2 tbsp Unsalted butter, lactose free
  • 1 tbsp Ginger, minced
  • 3 pcs Spring onions
  • 170 g Honey
  • 1 tbsp Cayenne pepper (if you want your wings extra spicy)
  • 150 ml Soy sauce
  • 60 ml Rice vinegar
  • 2 pinch Salt
  • 2 pinch Black pepper, ground

Method

  1. Place the chicken wings in a large bowl and pour the ketchup over the wings. Toss with your hands to coat evenly, cover the bowl with plastic wrap then chill for a minimum of 6 hours.
  2. Preheat oven to 200°C. Line a baking sheet with foil and place a grilling rack on the foil leaving a bit of space in between for air. Set the oven shelf to the upper third of your oven.
  3. Now, combine the honey, vinegar, soy sauce, garlic, cayenne pepper, butter, and ginger in a saucepan then simmer for about 15 minutes until the juices are thick and syrupy.
  4. Place the chicken on the grill and bake for 15 minutes on each side then baste the wings with the sauce, turn the other side and baste again. Keep basting until the chicken is cooked through for 15-20 minutes.
  5. Serve the chicken wings on a platter and garnish with green onions.
