Ingredients
- 75 g Red onion, diced small
- 3 clove Garlic clove, minced
- 170 g Tomato paste without salt
- 3 tbsp Balsamic vinegar
- 140 ml Vegetable broth, bouillon or consomme, low sodium
- 570 g White beans, canned
- 3 ml Liquid smoke
- 1 tsp Soy sauce
- 3 slice Sourdough bread
- 4 sprig Coriander (cilantro) leaves, fresh
- 1 tbsp Maple syrup
Method
- Heat a wide pan over medium-high heat and add the onion, garlic and a splash of stock (or water). Simmer until the onion is tender then add the tomato paste and reduce the heat to medium. Cook, while stirring, for a minute or two until the tomato paste darkens in colour a little.
- Add the vinegar and simmer for a minute. Add the vegetable stock and beans. Simmer for about 5 minutes or until the sauce is as thick as you like it and the beans are heated through.
- Remove from the heat and add the liquid smoke and soy sauce and the maple syrup.
- Serve the beans over a nice slice of sourdough toast and add a sprinkling of your favourite herb. I like to use coriander.
- Enjoy the delicious beans for breakfast, lunch or dinner.
