Ingredients
- 200 g Beef mince
- 1 tbsp Olive oil
- 100 ml Milk
- 200 g All purpose flour
- 130 g Tomato paste
- 100 g Mozarella, shredded
- 80 g Pork pepperoni, sliced
- 1 1/2 tsp Fresh yeast
- 1 tsp Cane sugar
- 1 pcs Onion, peeled, chooped
- 1 pcs Egg, whisked
- 2 clove Garlic, minced
- 1/2 tsp Salt, fresh ground
- 1/2 tsp Black pepper, fresh ground
Method
- Prepare the dough: combine flour with yeast, sugar, and salt in a bowl.
- Make a well in centre then pour in the milk and olive oil.
- Start to bring flour in the milk from sides and continue adding until you have a sticky dough.
- Dive in with hands then stir and knead dough until just combined.
- Transfer the dough onto a floured surface then knead until smooth and elastic.
- When it's ready, cover the dough with a clean kitchen cloth and place aside until it doubles in size.
- Meanwhile, prepare the filling: heat olive oil in skillet; add onion and cook for 5 minutes.
- Add garlic and cook for 1 minute or until fragrant.
- Stir in beef mince and cook until browned.
- Drain excess fat then stir in tomato paste then season with salt and pepper.
- Cook for 5 minutes and stir in pepperoni slices.
- When dough has doubled in size, punch it down to remove air and divide into two equal parts.
- Roll out each dough piece to 0.5cm thick circle.
- Spread the beef mix over dough, leaving 2-cm border.
- Top the beef with mozzarella and cover with second layer of dough.
- Pinch the edges to seal.
- Brush the calzone with whisked egg then bake for 15-18 minutes.
- Remove from the oven and let it rest for 5 minutes before serving.
