Ingredients

  • 140 g Gluten free flour mix
  • 3 pcs Free range eggs
  • 2 tbsp Unsalted butter, lactose free
  • 100 ml Milk, lactose free
  • 100 ml Soda water
  • 1/2 tbsp Icing sugar
  • 2 tbsp Grapeseed oil
  • 2 pinch Salt

Method

  1. Start by using an egg beater to beat the eggs. This helps get a smooth batter.
  2. Add the flour little by little, still using the egg beater. Slowly whisk in the milk. A great tip is to only use as much milk as the flour can handle.
  3. Next, add the icing sugar, oil, and salt, whisking all the while.
  4. Mix in the soda water and whisk until you get a smooth batter. Let the batter rest for 30 minutes.
  5. Preheat your griddle and when hot enough, scoop the batter using a soup ladle; half a soup ladle will make a good-sized pancake.
  6. You do not need to use oil when cooking but you can melt a little butter for the first three, the rest will not stick to the griddle even if you don’t use oil.
  7. Cook the pancake until it attains a golden colour and no longer sticks to the bottom of the pan, then cook the other side.
  8. Repeat the process until all the pancakes are done.
  9. Enjoy!
