Ingredients

  • 75 g Strawberries, washed, chopped
  • 60 g Rolled oats
  • 30 g Rhubarb, raw, cut into cubes
  • 1/2 tsp Lemon juice
  • 10 g Maple syrup
  • 120 g Almond milk, unsweetened
  • 10 g Chia seeds
  • 15 g Coconut yogurt, plain, cultured, so delicious
  • 1 pinch Sea salt flakes

Method

  1. We will start by making the jam - In a small saucepan over medium heat, simmer the strawberries, rhubarb, lemon juice, and salt for 10 minutes, stirring often so that the fruit doesn't burn to the bottom of the pot.
  2. Remove from the heat and stir in the maple syrup and chia seeds. Let cool to room temperature, 20 to 30 minutes (the rhubarb will continue to soften).
  3. Transfer to a jar and chill for at least an hour, or prepare this with the oats jars the night before.
  4. Make the oats jar - Place the oats into a glass jar, pour in the almond milk, a pinch of salt, and maple syrup, if desired. Stir, cover, and chill overnight.
  5. In the morning, assemble the oat jar with a generous scoop of the chia jam. You should have enough jam for 2 jars or more if it is too sweet for your liking.
  6. Top with 1 tbs coconut yoghurt.
  7. Enjoy.
