Ingredients
- 300 g Red lentils
- 1 pcs Bay leaf
- 1 pcs Onion
- 2 pcs Egg
- 2 tbsp Oat flakes
- 2 tsp Thyme, dried
- 2 tbsp Olive oil
- 1 pcs Carrot
- 2 clove Garlic
- 3 tbsp Oat flour
- 1 bunch Parsley, fresh
- 4 tbsp Sunflower seeds, roasted without salt
Method
- Rinse the lentils, then place them in a pot with enough water to cover them. Add a pinch of salt and a bay leaf, then cook for about 25-30 minutes until tender. Drain and set aside.
- Peel and chop the carrots, then steam until tender. Allow the lentils and carrots to cool slightly, then transfer them to a food processor. Add the peeled and chopped onion and garlic, and blend until smooth and creamy.
- Add the egg, oat flour, oats, sunflower seeds, thyme, chopped parsley, salt, and pepper to the mixture, and stir well. Taste and adjust the seasoning or texture if necessary.
- Form the mixture into small patties and flatten each one slightly. Arrange them on a baking sheet lined with parchment paper and drizzle with a bit of olive oil. Bake in a preheated oven at 180°C (350°F) for about 30 minutes until golden.
