Ingredients
- 200 g Dark chocolate, 45-59%
- 5 pcs Eggs, yolk and white separated
- 30 g Cane sugar
- 30 g Icing sugar
- 1 1/2 tbsp Gluten free flour mix
- 1 1/2 tbsp Butter, unsalted
Method
- Separate the egg yolks and whites into two bowls.
- The one with the egg yolks should be bigger than the other as that will be where you'll mix together everything at the end.
- Melt the chocolate with one tablespoon of butter.
- When it's melted, let it cool.
- Add the sugar to the yolks and blend it into a mousse with the robot mixer.
- Add the icing sugar to the whites and blend it until the mixture is hardened.
- Heat the oven into 175°C.
- Spoon by spoon, add the melted chocolate to the yolk mixture then mix it well.
- Butter a round cake form with the remaining half tablespoon of butter.
- Add the egg white mixture to the chocolate mix carefully, then pour the batter into the form.
- Bake for about 20-25 minutes until the top is almost crispy and the inside is not dried out.
- Let it cool down in the turned off oven with closed door.
- The top may be cracked, and the cake will probably drop after baking, but this is normal.
- It's good when it's still a bit creamy under the skin.
- Decorate with icing sugar and serve warm with a spoon of vanilla ice cream.
