Ingredients

  • 250 g Whole wheat flour
  • 130 ml Lukewarm water
  • 2 tbsp Olive oil
  • 500 g Cottage cheese
  • 2 tsp Erythritol
  • 2 tbsp Grated zest of lemon
  • 1 tsp Vanilla extract
  • 250 g Red berries mix
  • 2 pinch Cinnamon, ground
  • 1 pcs Egg

Method

  1. In a bowl, mix together the whole wheat flour and salt, pour in the warm water and olive oil.
  2. Knead the ingredients into a firm, elastic dough. Add more flour or water as needed to achieve the right consistency.
  3. Shape the dough into a ball and let it rest for at least 30 minutes.
  4. Meanwhile, prepare the filling. Mix the cottage cheese, erythritol, lemon zest, vanilla extract, and the ground cinnamon in a bowl.
  5. Preheat the oven to 180°C.
  6. On a floured surface, roll out the dough thinly. If necessary, dust the dough with flour while rolling.
  7. Spread the cottage cheese mixture evenly over the dough, then evenly sprinkle fresh or frozen fruits.
  8. Roll up the strudel tightly.
  9. Transfer the strudel to a baking sheet lined with parchment paper. Brush the strudel with beaten egg on top.
  10. Bake the strudel in the preheated oven for about 30-35 minutes, or until golden brown.
