Ingredients

  • 70 g Coconut flour, unsweetened
  • 3 tbsp Applesauce, unsweetened
  • 3 tbsp Coconut yogurt
  • 3 pcs Apples, cored, sliced
  • 70 g Maple sugar
  • 250 ml Almond milk
  • 4 tbsp Coconut oil
  • 1 tsp Vanilla pods, ground
  • 1/2 tsp Baking soda
  • 1/2 tsp Cinnamon, ground
  • 1 pinch Salt

Method

  1. In a large mixing bowl, mix coconut flour, baking soda, 1 tablespoon of maple sugar, and salt.
  2. Add in applesauce and coconut yoghurt, then mix precisely to avoid lumps.
  3. In batches, add almond milk, stirring constantly, then add vanilla and half of the melted coconut oil.
  4. Let the batter rest, then preheat the oven to 190°C.
  5. Prepare the apples: peel, core, and slice them. Mix the maple sugar with the cinnamon.
  6. Take a 5cm deep oven-proof skillet and melt the remaining oil. Coat the skillet on the sides with the oil, then add the maple sugar.
  7. Arrange the apple slices on the melting sugar then wait until the sugar starts to be fragrant.
  8. Take off from heat and add the batter carefully, then place the skillet into the oven.
  9. Bake on 220°C for 15 minutes then lower the heat to 190°C and bake for 15 more minutes.
  10. When it's done, place it onto a serving plate.
