Ingredients

  • 2 pcs Mashed overriped bananas
  • 80 ml Maple syrup
  • 30 ml Applesauce, unsweetened
  • 5/8 tsp Vanilla extract
  • 5/8 tsp Cinnamon, ground
  • 120 ml All purpose flour
  • 120 ml Pastry flour
  • 40 ml Flaxseeds, ground
  • 5/8 tsp Baking soda
  • 3/8 tsp Baking powder
  • 1/8 tsp Sea salt flakes

Method

  1. Preheat oven to 350˚F and line a bread loaf pan with baking paper.
  2. Place the bananas in a medium or large bowl and mash using a fork or masher. The bananas do not have to be completely smooth, it’s ok to have some small chunks for texture and make it even more delicious.
  3. Add in all the remaining wet ingredients with the mashed bananas and mix until everything is well combined, but remember not to over mash.
  4. Now, in a separate bowl add in all the dry ingredients and mix them together.
  5. Then add to the wet and mix until everything is combined. DO NOT OVER MIX. A little thick with some lumps. Perfecto!
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes. The banana bread is done once you insert a knife or toothpick and it comes out clean. Keep in mind all appliances are different so cooking time can vary several minutes one way or the other.
  7. Remove the banana bread from the oven and let it cool for a bit in the tin. Then, carefully remove it and allow it to cool, preferably at room temperature, on a cooling rack. The longer you let it set the easier it will slice. Let's see how disciplined you are here. The smell alone gets me and it is irresistible.
  8. Slice, serve, and enjoy!
