Ingredients

  • 430 ml Zucchini, grated
  • 140 ml Wholegrain flour
  • 70 ml Oilve oil
  • 70 ml Coconut sugar, organic, Madhava
  • 140 ml Apple, peeled, pureed
  • 70 ml Cocoa powder, unsweetened
  • 6 g Baking powder
  • 5/8 pinch Salt
  • 30 g Dark chocolate, 70-85%

Method

  1. 1. Preheat the oven to 150 °C (300 F) and place a baking paper on a baking tray.
  2. 2. Grate the zucchini using a cheese grater, but don't squeeze it out, just set it aside!
  3. 3. In a large bowl, measure out the dry ingredients (flours, cocoa powder, baking powder, salt) and mix them together.
  4. 4. In another bowl, mix the sugar and oil together, then add the dry ingredients in parts. If the dough is very dry, don't worry, the zucchini will improve the consistency. Do not add extra water or milk, there is plenty of zucchini!
  5. 5. Add the zucchini to the mixture and the juices from the zucchini. Mix the mixture thoroughly, then let it rest for 5 minutes!
  6. 6. Mix in the 85% dark chocolate chips, then pour the whole mixture into the baking tray lined with baking paper.
  7. 7. Place the baking tray in the preheated oven and bake for 25-30 minutes on the upper and lower baking settings. Make a pin test to see if the brownie is already baked!
  8. 8. Remove the pan from the oven and allow the brownies to cool completely. It's delicious both hot and cold!
