Ingredients

  • 110 g Bananas, mashed
  • 1 tsp Cinnamon, ground
  • 1 tbsp Flaxseeds
  • 3 1/2 tbsp Maple syrup
  • 130 g Rolled oats
  • 1 tsp Vanilla extract
  • 40 g Blueberries
  • 130 g Orange, peeled, quartered
  • 110 g Strawberries
  • 180 g Coconut yogurt, plain, cultured, so delicious
  • 3 tbsp Hemp Yeah!, plant protein blend, vanilla

Method

  1. In a bowl, smash the banana with a fork, add the cinnamon, flax seed, maple syrup and oats.
  2. Combine with a spatula.
  3. Line your cupcake pan or use silicon cupcake holder.
  4. Press the mixture in, molding the cups. Press on the base and up the sides.
  5. Place the pan in freezer for 10 minutes if you have time.
  6. Preheat oven to 350.
  7. Remove muffin cups from freezer and press each firmly into the base and sides of the muffin cups again.
  8. Bake in the preheated oven 20 to 25 minutes. Press again with a spoon if you feel you need to.
  9. Let cool for 20 minutes before removing from muffin cups.
  10. Mix together the coconut yoghurt and the vanilla protein powder. Fill each cooled cup with the protein yogurt.
  11. Top with a few pieces of fruit of your choice. I like blueberries, orange, kiwi, mango, strawberries or raspberries.
  12. Enjoy.
