Ingredients

  • 8 slice Bread, dried, cubed
  • 2 tbsp Raisins, soaked, seedless
  • 340 ml Milk, lactose free
  • 2 tbsp Maple syrup
  • 3 pcs Eggs
  • 3 tbsp Cane sugar
  • 2 tbsp Unsalted butter, lactose free
  • 1 1/2 tsp Lemon zest
  • 1 tsp Cinnamon, ground

Method

  1. Preheat the oven to 180°C.
  2. Take a shallow heat-proof baking dish then butter it.
  3. Melt the remaining butter on heat.
  4. Put the bread cubes into the baking dish.
  5. In bowl, blend the eggs with the melted (and cooled) butter and sugar.
  6. When the eggs are pale and a bit foamy, add the milk, maple syrup, lemon zest, and cinnamon.
  7. Mix the ingredients well.
  8. Pour the mixture onto the bread cubes, then sprinkle the raisins onto it, reserving some for the top.
  9. With two spoons, carefully blend the bread cubes to get the milky mixture and raisins everywhere.
  10. Sprinkle the remaining raisins on the top and pour the pudding into the oven.
  11. Bake until the eggs-milk mixture are cooked through and the top gets a light brown colour.
  12. Let it cool a bit out from the oven and serve it warm.
