Ingredients
- 500 g Potatoes, cooked, mashed
- 170 g Gluten free flour mix
- 1 pcs Egg
- 1 tsp Salt
- 100 g Ramsons (wild garlic)
Method
- Wash the potatoes and cook them in boiling unsalted water.
- After they're softened, let them cool down for a while, then peel them.
- Mash the potatoes in a bowl then add the egg and the salt. Mix them.
- Wash the wild garlic leaves and put them into the blender. Blend until you get a liquid-like consistency.
- Add the wild garlic sauce to the potatoes mixture.
- Part by part, add the flour to the mixture until you get a dense consistency.
- Cut the dough into four pieces, then roll the pieces one by one into 2cm-diametered rolls.
- Cut the rolls into same-size parts (approximately 1.5 cm long pieces).
- Form the pieces into egg shape. If you want, decorate them with a fork, pushing the top of the fork into them.
- Put the raw gnocchis into boiling water and cook them until the gnocchis comes up to the surface of the water.
- Take them out and add the sauce or other ingredients you planned to put.
