Ingredients

  • 230 ml Homemade condensed milk, lactose free
  • 210 g Dark chocolate, 45-59%, chopped
  • 50 g Pistachios, unsalted
  • 50 g Glace cherries
  • 25 g Coconut flakes
  • 20 g Unsalted butter, lactose free
  • 1/8 tsp Fresh ground salt

Method

  1. Place the chopped dark chocolate, condensed milk, butter, and salt into a heavy-based pan; heat over low heat and stir until melted and well-combined.
  2. Place the nuts into a freezer bag and bash them with a rolling pin, until broken up into some large and small pieces. Save a smaller amount for decorating.
  3. Chop glacé cherries and also save a smaller amount for later.
  4. Add the nuts to the melted chocolate mixture and stir well. Add chopped glacé cherries and coconut flakes.
  5. Pour the mixture into a 23cmx9cm rectangular tray, lined with parchment paper and sprinkle the top with the remaining nuts and cherries.
  6. Let the fudge cool, then refrigerate until set, for 2-3 hours.
  7. Cut in pieces before serving.
