Ingredients

  • 100 g Blackberries, frozen
  • 100 g Raspberries,frozen
  • 1 tbsp Cane sugar
  • 50 g Gluten free flour mix
  • 50 g Gluten free flour mix
  • 100 g Rolled oats
  • 100 g Oat flakes
  • 40 g Unsalted butter, lactose free, melted
  • 2 tsp Cinnamon, ground
  • 1 pinch Baking soda

Method

  1. Preheat oven to 150°C.
  2. Place a medium saucepan over medium heat and add the berries, 3g cinnamon, 2 tablespoons sugar, and water then stir frequently.
  3. Once the mixture starts boiling, reduce the heat and let it simmer for around 8 minutes or until the mixture starts to thicken, then turn off the heat.
  4. Meanwhile, combine the oats, flour, remaining cinnamon, and baking soda in a mixing bowl.
  5. Slowly stir in the melted butter and mix well until the ingredients are very well combined.
  6. Divide the flour mixture into two and set one aside, this will form the topping.
  7. Scoop the remaining mixture into an ungreased baking pan (9” square pan).
  8. Bake for around 25 minutes then remove from oven.
  9. Evenly spread the berry mixture on the baked crust then top with the reserved flour mixture.
  10. Press the flour mixture lightly using your fingers and return to the oven and bake for another 20-25 minutes until the topping starts browning.
  11. Remove the pan from the oven and allow to cool on a wire rack, then cut the blackberry muesli bar into desired sizes and shapes.
