Ingredients

  • 100 ml Dates, pitted and chopped
  • 100 ml Oats
  • 1 3/4 tbsp Peanut butter, 100% pure, unsweetened, unsalted
  • 13 g Nuts, chopped
  • 4 g Dried cherries
  • 4 g Raisins
  • 4 g Dried plums
  • 1 3/4 tbsp Honey
  • 1/4 tsp Cinnamon, ground
  • 0.43 pinch Small pinch of salt

Method

  1. Preheat your oven to 175°C and line a baking sheet with parchment paper.
  2. In a food processor, combine the chopped dates and oats. Pulse until the mixture forms a sticky dough-like consistency.
  3. Transfer the date and oat mixture to a mixing bowl. Add almond butter (or peanut butter), chopped nuts, dried fruit (if using), honey or maple syrup (if using), cinnamon (if using), and a pinch of salt. Mix until well combined. The mixture should be sticky and easily moldable.
  4. Take tablespoon-sized portions of the mixture and roll them into balls. Place each ball on the lined baking sheet and flatten slightly with your palm or a fork to form cookie shapes.
  5. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown.
  6. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  7. Once cooled, store the date cookies in an airtight container. They can be kept at room temperature for several days or refrigerated for longer freshness.
