Ingredients

  • 200 g Beef mince
  • 100 ml Milk, lactose free
  • 1 tbsp Olive oil
  • 200 g All purpose flour
  • 130 g Tomato paste
  • 100 g Mozzarella, lactose free, shredded
  • 80 g Pork pepperoni, sliced
  • 1 1/2 tsp Fresh yeast
  • 1 tsp Cane sugar
  • 1 pcs Onion, peeled, chooped
  • 1 pcs Egg, whisked
  • 2 clove Garlic, minced
  • 1/2 tsp Salt, fresh ground
  • 1/2 tsp Black pepper, fresh ground

Method

  1. Prepare the dough: combine flour with yeast, sugar, and salt in a bowl.
  2. Make a well in centre then pour in the milk and olive oil.
  3. Start to bring flour in the milk from sides and continue adding until you have a sticky dough.
  4. Dive in with hands then stir and knead dough until just combined.
  5. Transfer the dough onto a floured surface then knead until smooth and elastic.
  6. When it's ready, cover the dough with a clean kitchen cloth and place aside until it doubles in size.
  7. Meanwhile, prepare the filling: heat olive oil in skillet; add onion and cook for 5 minutes.
  8. Add garlic and cook for 1 minute or until fragrant.
  9. Stir in beef mince and cook until browned.
  10. Drain excess fat then stir in tomato paste then season with salt and pepper.
  11. Cook for 5 minutes and stir in pepperoni slices.
  12. When dough has doubled in size, punch it down to remove air and divide into two equal parts.
  13. Roll out each dough piece to 0.5cm thick circle.
  14. Spread the beef mix over dough, leaving 2-cm border.
  15. Top the beef with mozzarella and cover with second layer of dough.
  16. Pinch the edges to seal.
  17. Brush the calzone with whisked egg then bake for 15-18 minutes.
  18. Remove from the oven and let it rest for 5 minutes before serving.
