Ingredients

  • 100 g Banana
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tbsp Apple cider vinegar
  • 70 g Strawberries, washed, chopped
  • 2 tsp Maple syrup
  • 60 g Spelt flour
  • 100 g Almond milk, unsweetened

Method

  1. Mash the banana with a fork and then combine the baking powder and soda and apple cider vinegar (if you don’t have acv you can use lemon juice).
  2. Next pour in flour and the almond milk and mix until you get a thick batter.
  3. Lastly fold in the strawberries gently, leaving them in chunks (leave a little to garnish the top of the pancakes with).
  4. Heat your non stick pan to medium heat, careful not to overheat as they can easily burn. Pour approximately 1 cup of batter for your pancakes.
  5. Cook approximately 3 minutes each side— keeping an eye on them not to burn them.
  6. Little bubbles will appear on top as they are ready to turn.
  7. Serve the pancakes with your maple syrup and some sliced strawberries.
  8. Enjoy!
