Ingredients

  • 160 ml Bread crumbs, gluten free
  • 120 ml Walnuts, English
  • 2/3 pcs Onion
  • 1 1/3 clove Garlic
  • 5/8 tsp Onion powder
  • 230 g Tofu, raw (not silken), not cooked, firm, not drained
  • 1 3/8 tbsp Light soy sauce
  • 1 3/8 tbsp Tomato paste
  • 5/8 tsp Smoked paprika
  • 5/8 tsp Thyme, fresh
  • 1 1/3 pcs Puff pastry, gluten free, lactose free

Method

  1. Preheat oven to 175 Degrees Celcius and line a tray with baking paper
  2. Heat a frying pan with a little water or vegetable stock and brown the chopped onions. Set aside
  3. If you don’t have breadcrumbs then blitz 2 slices of wholegrain bread in your food processor until they turn to breadcrumbs. Add the walnuts or cashews (whichever you prefer to use), smoked paprika and onion powder (or BBQ spice mix works well also) and blitz again until they are processed and mixed in with the breadcrumbs.
  4. Next add in the wet ingredients - onions, tofu, minced garlic, tomato paste, soy sauce and blend until combined. Make sure you do not over blend as the mixture won’t hold together when you make your sausage rolls. Just blitz until combined.
  5. Lay the slightly thawed puff pastry squares out on to the lined baking tray and spoon the mixture into the middle of each pastry evenly. Roll up the pastry to make one large sausage roll and divide it into 9 sausage roll sized pieces on each piece pastry with the blunt edge of the knife pressing down firmly.
  6. Bake in the oven until golden brown (approximately 25 mins).
  7. Leave to stand for 5 minutes before dipping into some tomato or bbq sauce.
  8. Yum!
