Ingredients

  • 250 g Whole wheat flour
  • 6 pcs Egg
  • 120 ml Water
  • 1 tbsp Olive oil
  • 10 g Salt and freshly ground black pepper to taste

Method

  1. Pour the flour into a mixing bowl and add the salt.
  2. In another bowl, crack two eggs and add a little cold water.
  3. Pour this mixture into the salted flour and stir with a wooden spoon. Add enough water to achieve a dough-like consistency for dumplings.
  4. While stirring, bring a large pot of water with salt to a boil, then use a spaetzle maker to press the dough into the boiling water.
  5. While the dough is cooking, heat oil in a deep-sided skillet.
  6. As the dumplings begin to float to the surface of the water, scoop them out with a slotted spoon and transfer them to the hot oil. Sauté briefly, meanwhile beat the remaining four eggs with a little salt.
  7. Pour over the hot dumplings and stir until the eggs are cooked onto the dough.
