Ingredients
- 1 pcs Homemade pie crust, lactose free
- 500 g Cherries, frozen
- 200 g Icing sugar
- 1 tsp Vanilla extract
- 1/2 tsp Cinnamon, ground
- 1 pcs Lemon, washed
Method
- Prepare the pie crust from frozen base, reserve 1/3 of it for covering.
- Bake the crust halfway (to harden the outer side and avoid the filling from making it sticky later) and let it cool down covered after baking.
- Grate the lemon zest, then squeeze the lemon juice.
- Put the frozen cherries into a pot with the lemon juice and sugar.
- Stew the cherries until soft and creamy, feel free to blend the mixture with a robot mixer if you want a creamier texture (I prefer it lumpy).
- When cherry mixture is ready, take it off from heat then add vanilla extract and cinnamon. Also add the lemon zest then mix them well.
- Pour the mixture into the pie crust, set aside while you cut star shapes (or any other shapes you wish) from the remaining pie crust dough.
- Place the stars onto the filling and bake the pie for 15-20 minutes on medium-high heat until the stars on the top are baked.
- Serve it dusted with icing sugar or with a spoon of vanilla ice cream.
