- 85 g Cane sugar
- 110 g Butter, unsalted

- 30 g Gluten free flour mix
- 30 g Oatmeal
Method
- Heat oven to 180°C.
- Take a large saucepan and melt together sugar, honey, and butter.
- Don’t let it heat up; just enough.
- Add flaked almonds, sliced cherries, and flour.
- Mix well.
- Line a baking tray with baking paper.
- Spread the mixture onto the baking tray.
- Bake about 10-15 minutes, until it gets a golden colour.
- Set aside to cool down.
- Melt the chocolate in water bath.
- Take another baking tray with a baking paper and turn the Florentine onto it.
- Take the paper out.
- Don’t be surprised if Florentine is sticky.
- If you have wholes you can still fix it.
- Spread the chocolate on top.
- Let it rest again, until the chocolate hardens.
- Use cookie cutters to cut the Florentines to the shapes you like.
