Ingredients

  • 600 g Watermelon, peeled, sliced to max. 1cm thick flat slices
  • 350 g Mascarpone
  • 1 tbsp Icing sugar
  • 2 tsp Lemon zest
  • 1 tbsp Almonds, blanched, chopped (optional)

Method

  1. Slice the watermelon big enough to cut out stars from the fruit. The number of the stars depends on your cookie cutter but you will need pairs at the end.
  2. Place the stars on a plate and tap their surfaces with a kitchen towel to dry.
  3. Stir in the lemon zest and icing sugar into the mascarpone. If it becomes too soft, chill in the fridge for a while to harden.
  4. Spoon the mascarpone cream onto every second star and pair them with another. Be careful to place the dried surface onto the cream to hold. If the melon is still wet, it won’t hold and the cream will flow out.
  5. Place the stars on a serving plate and sprinkle with the almonds.
  6. Chill in the fridge if needed, but not long. It’s best when prepared almost right before serving, because they lose their quality by the hour.
